Title : Chemical composition of Mallard duck livers during cramming.

Summary : During the cramming of Mallard ducks, the liver weight is increasing from 107 g to 763 g after 14 days of force-feeding. The chemical composition (dry matter, lipids, proteins) is measured at J0, J2, J4, J6, J8, J10, J12 and J14. A ration fat on protein around 6 is reliable to a sufficient steatosis of liver with remnants of proteins and preservation of cell structure.
