Title : | The infuence of plasma membrane composition of hepatocytes on sterilization yield of goose fatty livers |

Summary : | Two experiments have been carried out to estimate the relationship between the hepatocyte plasma membrane and the sterilization yield in goose fatty livers. These experiments were investigated on an homogeneous population (genetic type, sex) to display individual variables of sterilisation yield. In the first experiment the too heavy fatty livers and the flauwed ones are discarded (mean weigh 950 g, mean yield 86 %). In the second experiment livers are sorted in order to restrict the weighteffect on cooking yield ; two groups with near weights were selected with a spare difference in yield(first group : mean weight of 1000 g, mean yield 87 % ; second group mean weight of 987 g, mean yield 74 %). The two experiments results exhibit a high correlation between the sterilization yield and the cholesterol / phospholipid molar ratio of the hepatocyte plasma membrane (R = -0.80 in the first experimentation and R = -0.90 in the second one). This last ratio is also positively correlated with more insaturate fatty acid (C18 : 1) in membrane phospholipids (R = 0.47). The higher cholesterol concentration with regard to the phospholipids one, could induce a lower membrane fluidity in high cooking losses fatty livers. |
