Summary : | For 217 cheeses received between March and June 1995 by the laboratory for veterinary and biological analysis of Puy de Dome, 177 samples gave comparable numbers of coagulase positive staphylococci (SCP) using either Bair Parker (PB) or Rabbit Plasma Fibrinogen Agar (RPFA). However, for 19 samples, the presence of a heterogeneous flora did not allow precise enumeration on BP but no interference was found for RPFA. The investigation for the presence of enterotoxin in the culture supernatants of SCP isolated from four raw milk cheeses showing levels of SCP higher than 100,000 SCP/g demonstrated the presence of an enterotoxin identified as Toxin H. |
