Title : Farm to slaughter study of pigs batches infection by Staphylococcus aureus and Yersinia enterocolitica: an exploratory study

Summary : Management of foodborne zoonotic hazards from farm to fork is of major health and economics significance, as issued into the European regulation. Among hazrads tranmissible to humans through pork consumption, Staphylococcus aureus and Yersinia enterocolitica were fewly studied in France. Thiw work purposed to study pigs batches infection from farm to slaughterhouse due to longitudinal study of 36 batches from 9 farms slaughtered into 3 slaughterhouses of the Western region of France. On farm, 69% of batches were considered positive for Staphylococcus aureus (cutaneous swabbing) versus 6% for Yersinia enterocolitica (fecal samples). At slaughter, 94% and 44% of carcasses batches were positive for Staphylococcus aureus and Yersinia enterocolitica, respectively. Data collected into this sample did not show ante or post mortem indicators statistically highly associated with hazards detection.
